Current Trends in Enrichment of Wheat Pasta: Quality, Nutritional Value and Antioxidant Properties

Wheat pasta is one of the most important cereal products and becoming increasingly popular worldwide because its convenience, simple formulation, long shelf life, high energetic value. usually obtained from refined flour rich in carbohydrates but with low content phytochemicals, micronutrients, fibre. The increased demand consumers for healthy foods has generated interest among both researchers food producers developing functional products. This review showcases current trends fortification. Changes nutritional value, cooking quality, sensory attributes, antioxidant properties durum common wheat enriched plant animal raw materials are discussed.
